Chili pepper is the fruit_of plants from the genus Capsicum,famous for its hot sensation in the mouth when eaten.The active substances responsible for their intensity when eaten are capsaicin (*-methyl-N-vanillyl-*-nonenamide) and other chemical substances
collectively called capsaicinoids.The hot sensation derived from chili pepper was exploited in weaponry where capsaicin is extracted and used as the main irritant in pepper spray.
Though there are so many varieties of pepper,the scotch bonnet chili pepper and Piri piri(also known as peri peri,pili pili )are famous in Nigeria.
Piri piri pepper is a long red chili pepper containing large quantity of carotene (provitamin A) and vitamin C. It is very common is southern Nigeria where it is preserved by sun-drying and sold as “dried-pepper”through-out the year.
